A Vegan Thanksgiving? Can The Two Go Hand In Hand?


 What’s the first thing that comes to your mind when you think of Thanksgiving?  Turkey, right?  Well, that would probably be the consensus

in most everyone’s minds when they think of this autumn holiday.  If you’re one of the trillion or so Thanksgiving turk-aholics, that’s a good thing.  If you happen to be a vegan, however, gnawing on a big turkey leg, isn’t really your cup of tea.  The good news for all of you vegan’s out there in the world today, is that there are a plethora of vegan recipes now that will satisfy even the most diehard of vegans.  That’s right, a vegan Thanksgiving is the wave of the future!

 

No longer will you have to hold off on the mashed potatoes because you know that they have been mixed with butter and milk to make them creamy.  The vegan-friendly option is to use Yukon Gold potatoes, which have a buttery flavor to them to begin with, so no butter is needed!  Mix the Yukon Gold Potatoes with a bit of olive oil and vegetable broth and you have a delicious, dairy-free classic prepared vegan Thanksgiving style!  Even your non-vegan guests will thank you!

 

Here’s a delicious side dish of sweet potatoes and apples that will make your vegan Thanksgiving even more perfect! 

 

          2 lbs sweet potatoes, peeled, cut into 1/8 inch slices and steamed for

             ten minutes.

          2 lbs Granny Smith apples, peeled, cored and sliced

          1 cup apple cider

          2/3 cup dried cranberries 

Directions:

In a medium saucepan, place the apples, cider and cranberries.

Cover and cook over medium heat about 5 minutes until apples soften.

Stir the sweet potatoes into apple mixture. Continue cooking over low heat several minutes, until flavors are combined.

 

 

If stuffing is one of your favorite dishes for Thanksgiving, but you won’t eat it because it is typically stuffed and cooked inside of the turkey, ask your host ahead of time if they would mind putting a small portion in a separate dish for you before stuffing the bird so you can enjoy a vegan Thanksgiving dish without the worry of it being mixed with any meat product. 

If you’re preparing a vegan Thanksgiving Tofu-Turkey (or, tofurkey), here’s a delicious and nutritious vegetarian cranberry sauce that everyone will enjoy.  Add 4 cups of fresh cranberries, 2 medium apples (cored and diced), ½ cup raisins, ½ cup brown sugar and 1 six oz. can of apple juice to a medium saucepan and bring to a boil over medium high heat, stirring constantly.  Cover and reduce heat to simmer 10 minutes, stirring occasionally.  Cool and enjoy!  It’s tangy but sweet and is sure to become a favorite to everyone at your dinner table!

Being a vegan or a vegetarian doesn’t mean you have to sacrifice a delicious meal.  You can prepare a multitude of meatless dishes that is sure to satisfy all and truly make you have a wonderful and memorable vegan Thanksgiving.
